Veg Pitha

Pitha is a specialty dish prepared mostly in sankranti. It’s basically a container filled with varieties of stuffing. My experimental dish looks like the Pitha. So you can call it “Pitha”, but this is not exact traditional pitha. This “Veg-Pitha” is too much healthy & testy, because it’s stuffing with full of vegetable. Most of the children’s are not like the vegetables but they like snacks and that’s why I twist the taste, so my little friends would love it.

Main ingredients are Carrot, Cauliflower and Spring Onion.

Carrot provides us many of the essential vitamins and nutrients that are necessary for our body to function properly. 
Cauliflower is very low in calories, it’s contains several anti-cancer phyto-chemicals like sulforaphane and plant sterols such as indole-3-carbinol, which appears to function as an anti-estrogens agent. Fresh cauliflower is excellent source of vitamin C. 
Spring onions add great nutritive and taste value to a dish and can be used in different ways. Nutritionally, green onions have a combination of the benefits of onions and greens. They are an excellent source of vitamin K and vitamin C, and a very good source of vitamin A too.
So, now you understand how much valuable those vegetables. Okay! Let start this recipe..

Time required: Less than 40 minutes.

Ingredients:
● 
2 cup flour ● 1 onion (chopped) ● 3 green chillis (chopped) ● 2 tbsp carrot (grated) ● 2 tbsp cauliflower (grated) ● 2 tbsp spring onion (chopped) ● 1 tbsp roasted peanuts (crushed) ● 1 tsp cumin seed pd (roasted) ● ½ sp black paper ● 1 pinch black seeds ● Salt (to taste) ● Sugar (to taste) ● 2 tsp butter ● Refined oil   

Procedure:

Step 1: Hit some butter in a pan and add black seed.

Step 2: Add onion, green chilli & peanuts, and fry for few minutes.

Step 3: Add cauliflower, carrot and spring onion now fry for another 2 to 3 minutes.

Step 4: Mix some salt. Cover the pan and cook few min till the vegetables are done.

Step 5: Add, cumin seed pd, black paper, & sugar mix well and cook for few second.

Sept 6: Take out the mixture from the frying pan and wait for few minutes for cooling. This mixture we’ll use for filling.

Sept 7: Make a soft dough with flour, oil, sugar, salt & warm water.

Step 8: Divide the dough into small balls and roll the balls & make a circles.

Step 9: Put some mixture in the middle of the round and fold it & seal it properly.

Step 10: Heat sufficient oil in a pan and deep fry the pitha until golden brown. 

It is ideal to serve snacks before coffee or tea. And ideal for the children lunch box. I hope all of my little friends and their mom’s will love it..
